Culinary Tips From Chef Raven
Brownies

1 package Baker's Unsweetend Chocolate Squares -- 8 squares
1 cup butter
5 eggs
3 cups sugar
1 tablespoon vanilla
1 1/2 cups all-purpose flour
2 cups Chopped walnuts -- optional
Preheat oven to 375º. Grease a 13 x 9 inch rectangular pan.
Melt chocolate and butter in microwave. Try 1 minutes and then 30 seconds after that, repeating as necessary. Stir between each. Stir until smooth. Place bowl into refrigerator to cool while doing the next step.
Beat eggs for 1 1/2 minutes, then add sugar slowly while continuing to beat. Add vanilla when all sugar has been added. Blend chocolate mixture into egg mixture on low speed. Be sure to scrape down sides of the bowl to be sure that mixtures are well combined. Add flour mixing just to blend. Stir in nuts now if you'll be using them.
Bake for 35 to 40 minutes but do not overbake. Cool in pan and then cut into squares.

NOTES : Unless you are serving the brownies for company, leave them in the pan and cut them as you use them. They stay fresher that way.
Use shortening (Crisco) to grease the pan. Never use butter, it will burn the bottoms.
