Culinary Tips From Chef Raven

Apple Crisp

This time of the year always has me thinking about apples. The following apple crisp recipe is super easy. Throw a scoop of good-quality vanilla ice cream on top and you have a luscious dessert.

Apple Crisp

5 apples, peeled, cored and sliced

2 tablespoons of lemon juice

1 cup all purpose flour

1 1/2 teaspoons cinnamon

1/2 teaspoon salt

1/2 cup cold butter, cut into pieces

Preheat oven to 350 degrees and grease an 8 inch cake pan or corning ware dish.

In a mixing bowl, place apples and sprinkle them with the lemon juice. Toss gently to mix well. Put apples slices into cake pan making sure that they are fairly even.

In a food processor, mix flour, sugar, cinnamon and salt just to combine. Add the butter and process until the mixture is evenly combined. Do not over process, just use the pulse feature. You can also use a pastry cutter to do this if you don't have a food processor.

Put flour mixture over top of the apples in cake pan and spread evenly making sure to seal the edges.

Bake for about an hour until the top is golden brown. Serve warm.

Store leftovers in the refrigerator, covered well. To reheat, either microwave for 30-45 seconds per serving or bake for 10 minutes in a 350-375º F oven.
