POUND CAKE
Sometimes, the simplest things are the best. A piece of perfect poundcake (please excuse the alliteration :-)) with your morning coffee or an easy dessert can be just the thing to satisfy.
The following recipe is super easy and is a great one to help those apprehensive bakers conquer their fears of scratch baking.
POUND CAKE
2 cups sugar
1 cup butter, softened
3 eggs
2 1/2 cups all-purpose or cake flour **
1 tsp baking powder
1 cup milk
1 tsp vanilla
dash salt
**I use cake flour because I have it but it will work just fine with a/p flour.
Preheat oven to 350º, grease a bundt pan or tube pan. You can also make two loaves instead using loaf pans.
Cream sugar and butter together and then beat in eggs, one at a time.
Add dry ingredients, mix well then add milk, vanilla and salt. Don't over-mix, just get it all well combined.
Bake at 350º for 1 hour or until a toothpick comes out clean. As with all baking, check it 5 or so minutes before it should be done in case your oven is high. Cake will have a nice light golden brown color.
Let cool in pan.
