Easy, Super Great Cookies...

Okay, I'm going to divulge one of my great secrets. Buy a box of Ritz crackers, a jar of creamy Skippy peanut butter and you're most of the way there. Unfortunately for any health nuts out there - this will not work with the "natural" peanut butters - it's got to be a sweet, creamy peanut butter.

Next you will need dipping chocolate. I use GHIRARDELLI Candy Making & Dipping Bar. I get it at Cost Plus Market which has stores all over the country. If you can't find that you can always melt some chocolate chips and use that.

Now, take one Ritz cracker and put a dollop of peanut butter in the center and then put another cracker on top to make a "sandwich". You want to put enough on so there's about a 1/4 inch in the middle but not too much that it will ooze out the edges. Make all of the sandwiches and set them on a cookie sheet.

Next take a piece of baking parchment or waxed paper and line another cookie sheet.

Melt the chocolate in the microwave in a small corning ware type dish. Do this carefully, 30 seconds at a time. Chocolate often still looks solid but if you stir it will be melted.

Now, one at a time, dip the sandwiches into the chocolate using a fork.

Scrape the bottom of the fork across the edge of the dish to get rid of the excess and then (still using the fork, not your fingers) place it onto the parchment lined cookie sheet.

Let the cookies sit for about an hour until the chocolate is set and then cover with plastic wrap. Let them sit for 2-3 days before serving.

They will taste just like a butterfinger bar and very few people will be able to tell that they are made with crackers!

To add a nice decoration, I make little squiggles on top with melted white chocolate. You can make a small parchment paper cone for that or even just put some into a ziplock bag and snip a tiny corner off for a makeshift pastry bag.
