Tips For a Fun and Happy Cinco de Mayo
If you are making fresh fruit margaritas (or any fruit puree) using berries, always freeze the fruit first. When fresh berries are frozen and then thawed, it breaks down the cell membranes of the fruit and releases the juices.
Like margaritas but find them a bit too acidic? Simply add a splash of club soda. Also, don't forget that virgin margaritas are great for a hot summer's day refreshment and a good choice if you'll be driving home from a Cinco de Mayo party.
For guacamole, choose avocados that will yield to a gentle pressure but do not have any specific soft spots or bruising. If you have avocados that are not quite ripe, put them into a paper bag and leave them on the counter. For a little speedier action, add an apple to the bag which will release ethylene gas which helps to ripen them.
If you'll be making fresh guacamole, don't forget to add some salt, it will bring out the flavor of the fruit.
