Culinary Tips From Chef Raven
Sticky Rice
Want to make real Chinese-style sticky rice at home? It couldn't be easier. Get some Jasmine rice (available at your supermarket, health food store or local Asian market) and prepare it as you would regular long grain rice. One part rice to 2 parts cold water and a sprinkle of salt, bring to a boil over medium heat in a heavy bottomed saucepan, turn down to simmer, cover the pan and cook for 25 minutes.
Unlike regular rice, Jasmine rice doesn't hold as well. I prefer to serve it immediately rather than letting it sit. It can get very gummy if you leave it in the pan with the top on it. To reheat, simply microwave for about 30 seconds per serving.
