BBQ Sauce

I know that for some people, Barbecue Sauce is a matter of particular pride. On the other hand, for some, Barbecue Sauce only comes in a bottle at the supermarket.

This is a very easy recipe for a ketchup based barbecue sauce. Keep in mind that all of the ingredients can be adjusted to your tastes. In fact, this recipe evolved from one that I read in a cookbook and messed around with it and changed it and changed it.

None of these amounts are set in stone so make changes if you want a smaller or larger batch. Unlike most recipes, this can easily be halved or doubled.

48 oz bottle of Heinz Ketchup
4 oz red wine vinegar
4 oz water
2 tablespoons worcestershire sauce
1/4 cup dijon mustard
1/2 - 3/4 cup brown sugar, depending on desired sweetness
1/2 teaspoon ground black pepper
1/2 large onion, chopped
2 cloves garlic, finely minced
1/4 cup oil

Heat a large saucepan over medium heat. Add oil, heat well. Add onion and saute until almost transluscent. Add garlic to onion and saute for 2 more minutes.

Add remaining ingredients and simmer for 5 -10 minutes, covered.

Cool well and (using a funnel) pour sauce back into ketchup bottle.
