Culinary Tips From Chef Raven

HARD BOILED EGGS

There are a number of different ways to cook hard boiled eggs. Some work better than others. The way that I've found to be most successful is to place the eggs in a small saucepan of warm water and cook over a gentle flame until boiling. Boil for one to two minutes and turn off the flame. After 20 minutes, rinse eggs with cool water.

I'd suggest strongly peeling them at this point. Every time I wait and peel them after they have completely cooled, they are nearly impossible to peel.
